Can you post a recipe maybe? Is this something like Tabasco? I was thinking about trying to smoke some Jalapenos this year and make some sauce, but I think Tabasco is fermented for three years or something so idk if I can get it to taste the same.

I do it like the old folks down here taught me. Take a narrow necked bottle with an air tight seal. Clean it and cover it with boiling water for about a min. drain and stuff with destemed chillies, after cutting a slit in each one so the vinegar can get in. Fill with vinegar. I use apple cider but you can use what ever kind you like. Some heat the vinegar first, I don't. Store it in a cool dark place for a couple of weeks and there you have it. Great on greens and beans .
Be carful not to burn yourself with the water, hot bottle, and chilies. Let the bottle cool before you stuff it with chilies.

Yes indeed, I did not wear gloves but washed again, and again after sliting peppers. I love this stuff and make gift bottles too, very popular stuff in this neck of the woods.

Oh ok, this is similar to what I did last year to preserve my jalapenos. The only difference was that I did half vinegar, half water, some salt, black peppercorns, and coriander (according to a recipe I found), and sliced the jalapenos up. It worked really well; I still have a couple jars left that have preserved out in the garage just fine! And I use the "juice" in salsa and guacamole and stuff. I think I'll try it your way this time, with full vinegar! Thanks for the info.

I read once somewhere that there was an old Central America civilization that actually used the capsaicin from hot peppers as a poltacee to cure STD's sexually transmitted diseases. Wonder what the scoville rating of that stuff was, more perspective on wearing skin protection.

Well I know that the first time I jarred the jalapenos I didn't wear gloves and I wasn't careful about them getting on my hands, and my hands didn't stop burning until I woke up the next morning! It was not a pleasant experience at all. O.o

Nice pic Hieron Remade makes me real hungry for jalopeno's. For variety I add baby onions, chunked carrots, cauliflower, celery and garlic to the mix. The only time peppers ever bother me is when I next rub my eyes and with severe allergies that is a constant temptation.

Can't stress the gloves enough!!! I made Garlic Onion Pepper Jelly last year and I did not use gloves after I cut, oh I'd guess, 3 lbs of peppers of various types, and the pain was terrible.
That sounds like something that would make a good punishment for pedophiles. LOL

They have yet to invent adequate punishment for those vermin. If they ever do this could be a leniency for a special holiday say halloween. Oh weren't we supposed to be discussing HPV, lol.

I like the pepper corn idea. My DH was separating seeds from Aji Amarillo chilis from Peru so I could dry them and then germinate them. He washed his hands five times, then wiped his sweaty brow and eyes.
