I want to make my own pepper flakes like you buy at the store.

I had looked for this last year. Just google "pepper hotness chart" There are different styles of charts.

The poblanos are just my speed... can't go much hotter than that and still enjoy my food. One year we grew these wee Thai peppers (big bushes with LOTS of small very hot peppers) that even friends who were veteran hot pepper lovers couldn't take the heat. WOW.

Thats a pretty bush of peppers ! I like it. I will see about those sometime. Peppers are fun.

There are a couple of really funny youtube videos of people trying to eat that Bhut Jolokia pepper. Apparently its heat gets worse over time instead of being immediately hot.
