A recipe given to me by an old friend for a delicious Jalapeno Mustard that is absolutely delicious. Good for using up some of those extra Jalapeno peppers ripening now.

Hot & Sweet Jalapeno Mustard

Mix and bring to a boil:

32 ounces cheap Yellow Mustard
1 Quart White Vinegar
1 Tbs Kosher Pickling Salt
6 cups Sugar
30-40 Jalapeno Peppers finely chopped in a blender.; cut off top stem only; leave seeds. ( Wear gloves when chopping hot peppers.)

Make a paste with 1-1/2 cups flour & 1-1/2 cups water. Add to mustard-pepper mix. Stir and boil till mixture is thick.

Fill sanitized glass canning jars with hot mustard mix; screw lids on tight. (no water bath needed) Turn upside down & cool for several hours, then turn upright. Let tops “pop” on their own to seal. Store or refrigerate when completely cool.   Makes 12-15 Half-Pints
