Sweet potato flatbread - 2 ingredients!!!
Quarantine cooking is getting pretty interesting. I just happened across this recipe today on Youtube, and thought, "Hey, I have a couple of sweet potatoes, and I've got flour. I can make this!" With only two ingredients, and a nice, detailed video, a short while later I had some beautiful (beauty being in the eye of the beholder) sweet potato flatbread. I had a piece with some lentil stew, and it was delightful, if I do say so myself. It really was as easy as it looks. The trickiest part was trying not to use a lot of flour when I was rolling it out, that resulted in my more or less "free form" flatbreads, instead of being nice and round like in the videos. I had one with some lentil stew, and it helped it feel more like a meal, than just some lentils. You could use it as a wrap, or a tortilla, you could add some garlic, some crushed red pepper, cilantro, whatever. Anyway, here is a pic of my flatbreads. And below is a link to the video. Trying not to go grocery shopping unless absolutely necessary may lead to trying some recipes we wouldn't have otherwise. I'm glad I gave this one a try. Enjoy!
