Sweet Potato "Toast" -- MIND BLOWN!
"To enjoy your sweet potato in toast form, simply slice it lengthwise with the skin still on, grill until soft (but not mushy), then place carefully in your toaster to crisp. Read on for ideas on how to top your sweet potato toast at every mealtime."
I've even seen it w/o pre-grilling . . . just a few rounds in the toaster.

I will have to try this. I love sweet potatoes, just about any way they can be made. Except with marshmallows. That sweet potato casserole topped with marshmallows has always seemed like a waste of good sweet potatoes to me. I've read that sweet potatoes are the most nutritious, but least expensive thing you can buy in the produce section. This is a new version I'll have to try. Thanks!

I don't have a grill. Wonder if it can be toasted completely in the toaster oven?

That's because marshmallows ruin sweet potatoes.
Still I look forward to trying this, as I plan on growing sweet potatoes next year and now I have an additional use for them.
Added benefit: Gluten free!
