I read that the sweet potato greens are edible. I love greens of all sorts. Any suggestions on preparing these greens. I loved my baby turnip greens harvested from thinned crop, chopped, raw with purple onion, basil, tomatoes and balsamic vinegarette. I like to eat my veggies "aldente" if I cook them at all. Curious now about sweet potato greens. ????

Welcome to the forum. Are you doing Square Foot Gardening using the ALL NEW SQUAREFOOT GARDENING book?

I just finished trying the sauteed Sweet Potato Greens. They were delicious!! I tried them both lightly sauteed (which I preferred) and also cooked to mush which is how my hubby likes his veggies. I even convinced him to try them and he pronounced them "normal flavor, the texture is different". This is a milestone for him..he does not try new things...Smile I think most of us have been throwing away one of the most nutritious things we can grow !! This will be a summer staple for me from now on !! Very Happy
