Along about the end of July someone posted a link to preserving dill flowers in a jar with vinegar so you will have them when the cuc's. are ready to pickle. I thought it was a good idea and put up a quart of dill flowers and filled the jar with vinegar and set it on the kitchen window. There it sat because I had more dill than I needed, growing and in fact I still have dill flowers now. I decided to throw out the dill because I didn't see a use for it but I tasted the vinegar and it's totally infused dill vinegar with a great taste. I put the vinegar in a bottle but  I don't know what to use it for. Any ideas?

Potato salad. Potato salad benefits from tartness because the potatoes make flavors kind of disappear into them. The acid from vinegar and the help of a few herbs can brighten up the potatoes again.

Personally, I like dill anyway, so would also use a dill-infused vinegar on a regular green salad quite happily, when mixed with a little oil first. I also like dill in bean salads.

Use some of the dill vinegar to put in with home made sweet spiced vinegar that you use in making pickled cucumber , gherkins or dwarf french beans  .

 I love the taste of dill ... it all seems to have started when as a three yer old I was found as drunk as a lord having sneaked behind the sofa & supped two 6 ounce bottles of dill & alcohol infused gripe water that my Mum had purchased earlier in the day ..

 Evidently it's all down  to bottles that had real metal topped corks in them and not these difficult to remove with your teeth screw on caps . Had it been the latter I'd most likely have been strictly teetotal all my life  Laughing

Don't forget macaroni salad, chicken, tuna or any other mayo salad.  Just a change up once in a while.

And Plaintoid, I love what has been marketed as candied dill pickles.
