Rhubarb Tom Collins
I love all the Rhubarb pies/crisps/jams ...
A few years ago I found a Rhubarb Tom Collins recipe. It's super easy, just make up a simple syrup using rhubarb/water/sugar and strain the syrup off the solids. Then mix 2oz gin, 2oz Rhubarb syrup, a dash of lemon juice and a little club soda. Pour it over ice and garnish with a small rhubarb stalk.
