I can attest to two parts of that article: They do create embarrassing levels of gas, and they are unstoppable once the start growing. It doesn't help that we didn't care for the taste of them, either.
I picked up a scab piece of one at a farmer's market one time years ago, and the guy told me I could have it if I wanted it since he couldn't sell it. I stuck it in the ground along the pasture fence line. It grew a huge plant which I dug that fall to collect the tubers for food. We didn't care for them, so I didn't re-plant any of it. But, the next spring there were about a half-dozen plants growing where I dug that one. They have continued multiplying year after year. Deer, however, can't leave the plants alone, and will continually eat off new growth.
