Free cookbook on Amazon - Everything Zucchini Recipes
Hello all,
I just came across a free digital cookbook from Amazon that has 81 zucchini recipes. Now, I have never grown zucchini... I have a Burpee variety growing right now. From all that I've heard, they are very prolific.
I truly hope I have a situation where I have zucchini coming out of my ears (we'll see). In any case, I've downloaded this book and I really like some of the recipes.

I'm sooo there! I just gave away a 2 lb zucchini and a 1 1/2 lb to my daughter and discovered another large one hiding this morning! I looked at the bush a day ago and thought I'd let it grow another day and it tripled in size!!!!
My daughter is celiac and I'm gluten intolerant and one of my favorite ways to use the larger zucchini is slicing them with one of my grater attachments that makes one long 1/4" thick strip and using them as lasagna noodles. They work great. It's low carb for anyone watching carbs and the texture is very close to pasta.

Thanks, I got the book! We have just made a few things with them but this has lost of ideas.

If you go to allrecipes.com and type in zucchini it will give you over 1,000 recipes using zucchini.
