A small harvest
My wife informed me that we were having pinto beans and cornbread for dinner tonight (one of my favorite meals). Being the full blooded country boy I am, I ran out to the TT SFG and plucked a couple of scallions to go with with my meal. I have had my eye on this square for several days now just waiting for the opportunity to try these.

I knew you had to be from the south for Pinto beans, cornbread and onions. We have that often! Add some fried potatoes for a real treat.

Scallions ..... a new word for my American to English dictionary book .
We call them spring onions .. a very popular variety here is called white lisbon. Sometimes they are quite mild almost sweet , sometimes though they blow your socks off and make your eyes water for a few minutes .
The green tops are often cut in to 1/52 ( ish ) sort of lengths and the resultant tubes of green are added to potato salads or cheese & coleslaws for a bit of " bite " .
We call them spring onions .. a very popular variety here is called white lisbon. Sometimes they are quite mild almost sweet , sometimes though they blow your socks off and make your eyes water for a few minutes .

LM was that unblanched or fried or some other way of prepping before freezing ?

Just washed, cut up, and put in zip lock freezer bags with as much air squeezed out as possible. Did the same with little banana peppers. Maybe it is a Eastern dialect thing? Any rate here in Montana and when I lived in SanDeigo we call those green onions. I have heard old timers call them spring onions as well.

Scallions
I have also always referred to scallions a green onions. I used to confuse them with shallots, but I know better now.
