zucchini chips
Found this recipe for those of you with too many zucchini!! Let me know how it is if you try it. We don't have an overabundance yet.

Great recipe find, SG! I just harvested a big beautiful one pound zuc and I was just wondering what to do with it.
But more exciting to me is the link on that page for a tender green chip recipe. It says you can use any kind of tender green for chips. Whoo! I have an OVERABUNDANCE of New Zealand spinach, and I bet thyd make great chips!

My daughter makes kale chips. I was hesitant to try them and WOW were they ever good! The kids (aged 1 and 3) gobbled them up like candy! Really really good, much to my surprise!

I just harvested two kale plants (getting big and scraggly so going to replant). I make them into kale chips and, oops, ate them all in one sitting. LOL!

What's the kale chip recipe? Does is work for all leafies? I just harvested a bunch of chard and collards.

CC, the link up top has a link in it that says, yes, you can use all leafies though I havent tried it yet. The recipe I use for kale chips is this one.

Just watch the greens closely. The recipe says 10 - 15 minutes but it only tooke mine 7.

Heading home now for lunch to try it with the collards and chard. Maybe I'll harvest some kale, too, just to get it right.

OK, I did it with collards in the toaster/convection oven. They were FANTASTIC! Took between 10-15 min but I had them on top of each other and they really want to be layered singly, so after 8 min I had to eat the done ones to make room for the undone ones and stick em back in. I also used too much sea salt, but nothing a big glass of iced tea couldn't take care of. Mom & I ate them all!
Can't wait to do 2 big cookie sheets in the regular oven. I'm going to try it with perilla and chard next.

That's great! I have a bag of broccoli greens that have been taking up room in my fridge for too long. Maybe I'll try making them into chips!
