Oregano

Being the first time I have grown oregano and reading Mel's book my question may be simple to most.

What it the best way to use it? Is the taste stronger after you dry it and how do I do that?

I cannot rightly say if the flavor is stronger after drying or not. It is the main spice in 'Italian blend' spice, so it is good in spaghetti sauce.

When it is time to harvest oregano I usually, in the morning, take the tall spikes of growing oregano, grab a hold and with a scissors give it a haircut, not down to the roots, but near the lower growth. I then just lay it out on newspaper, out of the sun,spreading the sprigs out to allow air circulation. When it is dried I take the leaves off the stems.

I do the same except that I de-stem before drying. The oils concentrate when the leaves are dry and to preserve that until you use them you don't want to crush the leaves. I find it easier to prevent that by taking them off the stem and then drying.

I harvest some the other day and my wife took the leaves off the stems as you both mentioned and we used it that night. I never had it fresh before and it was very good!!!

But you suggest taking the leaves off first and then drying them?
