My peas are definitely done for the season and I was wondering if there is anything in particular that grows well in the summer desert heat, that I could plant now, either from seed or starter plants.

I do not know the desert, but peppers and eggplant would be the ones that like the heat...
Oh and cantaloupe but perhaps to get some starts would be best.
I might be completely wrong because we basically are in opposite places.

A little late for seedlings but the following established plants should work for you as I've had success:
- Eggplant
- Peppers
- Melons
- Rattlesnake beans
- Basil (under shade cloth)
- Cucumbers (under shade cloth)
- Swiss Chard (under shade cloth)

I've got zucchini, basil, bell pepper, jalapeno and some sickly tomato plants growing. These were planted back in May or prior. In addition to the suggestions from the above posts you could also try pumpkins and even tomatoes under a shade cloth.
