Easy Peasy Thin Crust Pizza
Although I have a pizza stone and paddle, sometimes I just don't want to fuss with making the dough when the pizza fairy hits.
So I just use a flour tortilla, spread on some sauce, add toppings and cheese, then bake it in my toaster oven at 400 for about 7-10 minutes.
Done!

I do this too! Being diabetic, I use low-carb tortillas. I stick the tortilla in a cast-iron skillet, pile on toppings, and stick in a 350 oven until the cheese melts. Makes dinner in about 10-15 minutes when I'm too tired to do anything else.

I do this too! If you want just a slightly thicker crust, use 2 tortillas - just put a few shreds of cheese (or more if you really want ) between the tortillas to stick them together when baking. This was one of my summertime staples when I was growing up! I LOVED my toaster oven!

Great idea! I use english muffins to make individual pizzas as well, although my kitchenaid makes pizza crust so easy that I usually just make a simple crust, always remembering to add ground mustard to the dough. It sounds strange, but it makes the crust yummy and savory.

Pitas make a great lazy crust too - especially if they're used from frozen.
