Todays harvest
I needed a bell pepper and found one finally starting to turn orange. While picking it I found these 3 monster cucs. I couldn't see them in the jungle that is my pole beans and cucumbers on a trellis. I had already picked 3 normal size ones last week and had been searching for more. I'll have to construct one of those leaning trellises next year.

Those are some biggies! They're perfect for Asian Cucumber Pickles! Yummy!
Asian Cucumber Pickles
Serves 6
Asian Cucumber Pickles
Serves 6
- 1 cucumber, peeled, seeded and sliced 1/4 " thick
- 1 teaspoon sea salt
- 2 tablespoons rice vinegar
- 1 tablespoon mirin (Japanese rice wine)
- 1 teaspoon sugar
- 1/4 teaspoon red pepper flakes
- In a large bowl, sprinkle salt over cucumbers and let sit for 20 minutes.
- Drain and cover with remaining ingredients.
- Refrigerate for at least 1 hour, or as long as overnight.
