pickled beets! Empty pickled beets!

I harvested my 2 squares of beets and this morning I made pickled beets! They are so pretty! Also harvested some Swiss Chard and am making some soup with it tonight.

Now i am trying to decide what to put in the empty squares!

mmm yum. I love beets. Hubby loves the greens too - talk about a good value crop! Care to share your pickled beet recipe? Mum or Dad used to make the best pickled beets but no one seems to have the recipe now. I also like them just cooked and sliced on my salads just plain. Yummy.

I always struggle with my summer garden - I get about as far as cukes, squash, melons, tomato, pole beans, okra and leaf lettuce for as long as it can last before it melts. This year I am going to stop at those guys but try and get my fall garden established earlier this year - it all pretty much died in the big snow we had in early december and nothing was quite ready. I was a little late to which did't help. Oh - I am trying tomatillos this year... see how they hold up to the heat.

Kiwirose, the pickling brine is 2 1/2 cups of white vinegar, 1 cup water, 1 cup sugar and 3 T. pickling spice. You put the spices in a piece of cheesecloth, bring to a boil and let simmer about 15 minutes. Then you just follow the basic recipe for pickling and add the brine to the hot jars and process for 30 minutes in a boiling water canner.
