What veggie plant leaves can you eat? I know you can't eat tomato leaves. What about some other plants. Pepper, eggplant, any of the vine plants? I know you can eat, turnip greens, radish, and beets. Anything else that you can eat?

Do not eat anything from the potato plant except potatoes! I would be wary of leaves of any vine plant. Many of them are nightshades. Also, do not eat rhubarb leaves.

Mustard greens are fine. I am growing amaranth this year and the leaves are said to be edible like spinach, so I'm going to try it.

Pea leaves -- somewhere there's a post about stirfrying the upper couple of leaves and tendrils. Which I completely forgot about when I pulled up the pea plants yesterday. Pits!

Can you eat these? Empty Amaranth Warning

Avoid eating amaranth if you have kidney disease, gout or rheumatoid arthritis as it contains oxalic acid which inhibits the absorption of zinc and calcium.

Also it's no good reheated. Only eat it fresh and then put the rest in the compost.

Hm, that is interesting SirTravers, I had not read that, thank you! We do not have any of the diseases you mention, and also, I found this: link Do you have personal experience with amaranth, especially with processing the grain?

No personal experience sorry. I just pick up on things I read. I'm slowly learning herbal stuff as I don't like going to the doctor.

I know raspberry leaf tea has long been recommended as a natural remedy; my wife will often drink it to relieve cramping. We haven't tried making it on our own yet (we've just bought the tea packets so far) but we will in the future.
