Pesto chicken, tortellini and vegetables
Even though the cherry tomatoes are still only coming in at a trickle, I know that soon enough I will be wondering what to do with them all. This recipe appealed to me, because it looks simple, quick to throw together, and a good way to use up some veggies. I thought the asparagus could be replaced with green beans or squash. The chicken could be switched out for shrimp, and if you keep some of the dried tortellini in your pantry, you could probably put this together without a shopping trip. It also looks like something that would work well if you're having a couple of friends over, because it doesn't require a lot of time standing at the stove. And the colors are just beautiful!

I can't wait to try this! I just posted Mel's Pesto Recipe, which could be used for this. When my cherry tomatoes ripen this will be my first dish. Looks delicious!

Yes, a great way to use up all the basil! Fresh pesto is always so much better than store bought. Be sure to try the burst cherry tomato sauce too. That sounds great! Thanks for the post. I actually need to make and freeze some pesto today, so maybe I will use some of it for this recipe! Good timing!
