A couple of recipes for when the tomatoes show up ;-)
I'm always looking for great veggie recipes, I love trying new things. I'm still salivating over last summers' burst cherry tomatoes over pasta! So I thought I'd share a couple of interesting looking ones that I've found. I haven't tried them yet, but they look awfully yummy to me. I'll wait for the garden tomatoes to show up, because nothing can compare to them. But I know that some of you will have tomatoes already, and you might find these interesting. Enjoy!

HG, Can you post the Fried Eggplant under its own name? It looks ab-so-lute-ly delicious.

Done! I know, doesn't that pic make you want some right now? All ingredients that I love, but would never have thought to combine in that way.

The weather warmed everso slightly on Friday & we got a few hours of hot sun , it was enough to turn a couple of pounds of cherry toms reddish so we harvested them , they fully completed the ripening indoors on a tray on the dining table over night.
Alison made tomato mush out of them , used some in a shepherds pie and froze the rest in three vac packs for future use .
A recipe she found suggested she removed the seeds after skinning them ... there'd have been nothing left if she had .
The big Money Maker toms are doing very nicely , some are almost three inches in dia and still not yet ripe , so I gave then another liquid feed about an hour ago.

We started getting tons of beautiful maters our of the garden...teh fams 2 favorite things for me to make are roasted salsa or just cutting up the beefsteak varieties (Amana Orange is my FAVORITE!) & topping them with our homemade pesto - also mostly from our garden.
In the last 3 weeks, I have made about 4 gallons of salsa...our family (2 adults, 4 kids) have eaten it ALL except 1 quart that I made Friday night!
