Yes, you should be able to grow the squash vertically without a problem. 

As for the determinate tomatoes, I believe you can, but they need more space than the indeterminates.  I don't have my copy of ANSFG on me, but I believe determinates are listed as needing 9 sq ft.

The ANSFG book reccomends 2 squares of trellis space for a vining winter squash.

If your bed is at ground level, plant squash (2 squares per plant) on the outer edges and let them vine over the side and onto the walkways.  Weed block cloth under the vine keep it much neater and weed free.   On my tabletops I trellis the vines and let the bushier ones lean out over the edges.  At least that's what happens when the squash beetles, dreaded SVB and pickle worms allow me to get any to stay alive.

I'm growing a determinate tomato in a single square, but it is a super bush container tomato (made specifically for pots), so very compact, only gets up to 2.5 to 3 feet tall. You could try a more compact variety like that if you want to save space.
