I will freeze some of the red bells, as well as make some frozen “Unstuffed Pepper Casserole” that will taste great this winter.

Yes, they are blanched and then dumped in ice water to chill them before freezing. Most aren't peeled, just scrubbed, with peeling just for ones that have "imperfect" growth area, then sliced.

It took my one small Cherokee Purple (that was dislodged by Mr. 4-point buck) a month to ripen indoors, but it's now ready for consumption.
I have 2-4 Romanesco squash struggling to survive under cover until sufficient maturity.
