I think you are my regional host.  I live and grow in Lafayette, La.  Where in La are you from?  I watched your video on chicken spaghetti.  It reminded me of how my parents cooked for 7 children.  My Mother's recipe was very similar to yours.

Some old time family favorites:

Debris
Hog's Head Cheese
Family Butcheries
Cracklins
Boudin - in the early days you could get blood boudin 
Home smoked sausage and tasso

I love our unique heritage, history and food.

If you are anywhere near Lafayette I would really like to meet you.

If no one claims you, you are welcome to become an honorary Canadian. I need a few more to help me with my Canadian Region as everyone in Canada except British Columbians are still digging out. 

I will do a search and see where you can be placed without you  coming to the Big White North.

Scroll down until you reach the Announcement:
and click What is a REGION FOR
Scroll down that page to the green line for REGIONAL FORUMS and read the first thread which is

THE PURPOSE AND USE OF REGIONAL FORUMS with map.
Click on the first thread which contains the map.
included are "here"s to find your region by Zip Code.

Hope this is helpful.

I think you should end up in Upper, Middle or Lower South. Without looking at a USA map I am not quite sure exactly where Layfayette is as the map is not marked with State names.  I do know where Tennessee is but that is not helpful in this case.
