Tonight we're having large red tomatoes stuffed with either chicken or tuna salad (onions from garden). One small cabbage will become cole slaw.  Unfortunately, the potatoes are not ready yet so potato salad will be from store-bought potatoes.

Haven't decided if kale will be on the menu, yet. Apple sauce from last year's apples might be good.

Frozen strawberries (from June) will become strawberry shortcake.

So happy that garden is finally "doing its thing"

I made sautéed eggplant for part of our dinner today.

The ingredients were as follows:

  • Eggplant - harvested from the SFG today
  • Garlic (3 cloves) - harvested from the SFG yesterday
  • Thyme - dried last year from plants grown in the first year SFG
  • Parsley - harvested today from the TT SFG
  • Onion - store bought
  • Olive Oil - store bought
  • Salt and Pepper - store bought

I had burgers, with sweet banana peppers, cuke, cherry maters, and carrots.  Also yum!

Last night was marinated oven roasted chicken and veggie kabobs, those little cherry tomatoes are perfect for skewing along with peppers, onions, and zucchini.

Introducing a new variety, "Hiding Garlic". This is a first, in my garden since last October, as soon as the  yellow squash leaves got big, I lost track of them. I found them while looking for weeds, they were green just last week. I had just watered but since they were so brown I pulled them anyway, that is why they have so much soil on them. (Hey CC, I tried a clove raw, it was delish!)
The garlic will go very well on the marinated baked chicken, along with the fresh green beans and squash for tonight's dinner.

What do you guys marinate your chicken in?  I do Italian dressing with additional garlic smashed in, but have not been bowled over with the bottled "marinades" at the store.

Mrs TD cooked up the freshly harvested broccoli as part of our evening meal. It was really delicious. BUT she was not too happy about finding the little green caterpillar (cabbage butterfly) in the broccoli when she was preparing it.  Very Happy

I marinated the chicken and veggies using the following recipe called Unbelievable Chicken.  Boneless chicken breast turns out very moist, tender, and flavorful.  I was surprised at the ingredients and you might be too, but I suggest you take the plunge and prepare yourself to fall in love.  This recipe is for six pieces of 1/2 chicken breasts but for the kabobs of course you are cutting up the six pieces chicken into bite size pieces for the skewers. This made 12 skewers if you put three to four pieces of meat on each skewer.

Hey Scorpio,
I marinated the chicken for two days in a raspberry vinaigrette, chopped AND crushed garlic, about a half Tsp of onion powder, a TBSP of Grey Poupon course ground mustard,and some spices-thyme, sage.
I put foil on a large flat cookie sheet, lay the pieces of chicken out on it, put it in my outdoor BarBQ grill and close the lid. I turn on the two middle burners to their lowest setting and cook/bake for about 50 minutes. I turn the pieces over after about 30 minutes.
This works with skinless or with skin on the chicken.

Ooo, man, that sounds delish too.  I love my chicken done done done.  And I love Grey Poupon in marinades....thanks.  My kids kinda hate the usual boneless skinless chicken breast because it can be dry and tasteless.  I try to keep it healthy and tasty!  Sounds good!  Will try these out, chicken is on sale at my store!

At the moment, I'm boiling Warba potatoes with diced garlic scapes and parsley (all home-grown) and will saute a red snapper fillet with organically-grown corn meal, spices, home-grown dill, and perhaps a bit of home-grown actual garlic, plus lemon juice.  The accompanying dish will be some home-grown broccoli and store-bought carrots, steamed.

I made Basil Pesto for the first time. I used basil and garlic from the SFG plus store bought pine nuts, parmesan cheese and extra virgin olive oil. I used the Vitamix blender to mix the ingredients. We had some of it with our evening meal. Result ... delicious.

1st ripe brandywine tomato, a one pounder,sliced with a little mayo, s&p. Plus grill cheese sandwich with my own dehydrated garlic.  Justified as I missed breakfast and last nights supper. Delicious and now it is officially summer at my place!
