Purple Yams

Purple Yams
I bought 4 small yams from a Hmong vendor at the Farmer's Market. You can imaging my surprise when I cut them open and they were dark purple! They were dry and tasteless. The only way I could eat them was to put them in the veggie chicken soup. Did I just get some green or old ones. Anyone else have a positive take on them, other than the beautiful color?

they were probably old. The Ones I grew last last year were wonderful.

I agree, they were probably from last yr. I, myself, am not fond of the purple variety, but, they normally have lots of moisture and flavor.

The purple sweet potatoes are a different type than those most often grown in the US. Here in Western Oregon, we can buy them at Uwajimaya Grocery (a popular Japanese grocery in Portland and Seattle). We find it fun to serve them to guests just to watch their surprise at the color. BTW, the dry ones like you bought are very good mashed with half of a ripe banana (for a bit of sweetness), butter, some orange juice concentrate, a bit of salt, and a very tiny amount of nutmeg. Give them another try. Bet you like them. Nonna
