Re: What are you eating from your garden today?
I don't really know, Marie. All I know is the Lebanese part. The seeds are Molly's Molly squash seeds and were a happy for me mistake. It's a great squash and I'm definitely adding it to my yearly garden.AtlantaMarie wrote:CC - this isn't the same thing as Vegetable Marrow Squash, is it?
Looks terrific!

A lot of my stuff tastes a lot better than it looks. I'm a natural born fan of one-dish meals, so my preferred arrangement of food is the pile.

Marinated lamb chops with garlic and basil from the garden; squash; salad greens + tomato, also from the garden; garlic mashed potatoes (ditto); strawberries.
Everything but the lamb from my SFG!

Marc,
BTW, I frequently do a saute with veggies, herbs, wine, protein, and perhaps a bit of starch, e.g., potatoes, brown rice, etc. Each dish is different.

Re: What are you eating from your garden today?
I like cooking that way, Donna. Even veggies that don't seem like they would go together often come together when sauteed together, and even more so simply by adding a sauce.
That's one of the reasons I like soups and stir fries so much -- most veggies just seem to make them better. They're a great way to clear stuff out of the vegetable drawer that's going to get old soon, or that you have too little of to make a dish out of anymore.
Even something like a quiche is pretty flexible. Out of spinach? Mustard greens work fine. Wrong kind of cheese? You can usually use another, etc etc.

Re: What are you eating from your garden today?
I just sent a reply and something ate it because it just went poof. Any way I will try again. I am always the last to know most things and I am sure most of you know how to do this and how easy and good it is. We made gravlax for the first time using a brown sugar and serrano chili rub, chili's from the garden. It turned out great. We take a water cracker and put some of the salmon on it and then a big slice of
black from Tula tomato, followed by homemade honey mustard and dill fronds on top. It is just great. Tonight we are having the salmon with three kinds of tomatoes on top with lemon, caper and mustard vinaigrette with sourdough bread. Can't wait. Right now I have a small bowl of pickled cherry tomatoes that I am munching on. I guess I am just tomatoing on.

That sounds great, johnp. Love that stuff. My neighbor has made it once or twice, but I never have. Sounds like with the dill and tomatoes and all, you're making up a very attractive preparation.

For lunch I made some sort of an Italian Mess I suppose. Started off gently wilting cut up swiss chard in half olive oil half butter, sautéed garlic, onion, sliced eggplant, tomatoes and banana peppers, added saved squeezed tomato juice from a prior adventure, s and p then topped it off with grated cheese. With a cup of coffee and an apple I'm good till late this evening.
That sounds like something that my wife does to make tomato sauce. She found the recipe on pintrest???????
Uses a whole clove of garlic!!!!!!!

Re: What are you eating from your garden today?
I made a soup tonight including aubergine, carrots, celery, chard, poblano, tomato, onion, garlic, basil and thyme. The parts of supper that didn't come from my garden: ingredients for homemade oat bread with butter, chicken, EVOO, salt & pepper, bay, water.

Re: What are you eating from your garden today?
My tomatillo-sauce chicken, with fresh tomatillos, a serrano chili, and home-grown garlic and onions. Plus, I think, some of the squash (as a side dish). .
Between the beans and the squash, I've had to order a 4.2-cubic-foot freezer to accommodate the overflow.

Nice to be forced to reckon with such abundance, Donna!
What's your tomatillo sauce chicken like? Is it a salsa verde, or something different?

Re: What are you eating from your garden today?
Marc,
I'd call it a salsa verde. My ingredients are tomatillos, garlic, onions, serrano chili, and cilantro, plus a bit of lemon juice. The chicken is sauteed with a hint of cayenne pepper, plus some ground black pepper.
Yes, yes, I know.... But my tooth extraction is doing well.
I generally serve this dish with steamed carrots, or perhaps corn, depending upon what's available, and brown rice, flavored with sesame oil.

Sounds pretty good.
I think I'd prefer the carrots, but most of the Mexicans I've known are crazy about corn. I'd still prefer the carrots anyway.

Next time you make salsa Verde donnainzone10 try using some cumin, oregano and lime juice to your regular recipe, it really adds to the flavor.

I made the eyeballs using a paper-puncher to get the little white circles, then scribbled on them with a sharpie marker.
