Sweet potato query
After all the talk earlier this year I decided that I wanted to try a sweet potato in a pot (indoors it will have to be).
On my second attempt I got some shoots, and now I have questions for you lot!
1. In the picture you can some stuff on a leaf of one plant which I have potted-up. This stuff appered before and I washed it off. Now it has come back and is on the more mature leaves. They seem healthy enough. Is it sugar crystallizing out or what? Does it matter?
2. I noticed that while the leaves are on the original potato, and for a while after I put them in water to root, they have a red tinge to them. Then they turn plain green. Is that just the way it is with sweet potatoes?
In the photo the leaves on the left are in compost, and the ones on the right are in water, rooting.

My sweet potato starts were also reddish on the plant and when I first put them in water to get roots, but have now turned more green. I have not planted the two rooted starts yet, but intend to plant them in a few days.
My first thought was that they are not getting any nutrition while in the water and I hope that the color will return after going into the Mel's Mix.
How long have you had the starts in compost?
I did not get any crystals on the leaves so again, I am not much help.
