Farro salad with heirloom tomatoes

Sadly, none of my tomatoes are ready to eat yet. But I was at Costco yesterday, and couldn't resist a container of heirloom cherry tomatoes. They were so pretty, I couldn't wait to use them in something, so I made a farro salad for lunch. It was very simple, using just what I had on hand, some diced onion, garlic, oil and red wine vinegar, lots of parsley, the tomatoes and farro. I tossed the farro with everything while it was still warm, and ate it that way too, because I couldn't resist. It was so good! Looking forward to trying this with fresh tomatoes from the garden. I think it would be nice with roasted veggies too.
