She took the Tornado cake recipe thats been floating around the internet and made it gluten free and much better. Tell all ya gluten free friends or for that matter every one this is a must try moist delicous treat.

Peg says use any non dairy milk like soy or almond should be good experiment and please let us knowhow it is so we can pass it on to others

Try guar gum if you can't find xantham. Most gluten free flours already have it.

I made your tornado cake for my friends, adding mango on top since we have so many.
I was really, really nervous about using all coconut flour because everything I have read says you can't use that much coconut flour, only a quarter to half a cup and other gluten free flour.
You have taught me something all the experts don't know. I mean, I have literally read BOOKS about coconut flour.
It was a terrific hit. Thank you again for the inspiration.
I try to find something to bake for dessert when my friends are working their butts off hacking back jasmine and bamboo up in Koke`e so this was ideal.

Tonight I watched one of my favorite shows, Adult Master Chef. The elimination competition was cooking with coconut. Half had to make a sweet dish and the other half a savory dish. Well, one man tried to bake with coconut flour and it was a major failure. I was all excited because I knew what was the secret - xanthan gum!

Strange that he wouldn't have tried it beforehand. Or is that part of the program?
I am still amazed that even with xanthum gum my cake turned out so well as everything I'd read previously said it couldn't be done with all coconut flour but I repeat myself.
