Yes, it has been a rather slow day here, and I was inspired to make, yes, bread. I have never done it before, and despite the fact that I forgot to divide the dough, and used the recipe off the back of the Kroger brand Active Dry yeast, it is delicious! I mean really good! A little dense, but hey, it is my maiden voyage! Now I am hooked...hobby 'til seed starting=found!

Oh yeah, I need to buy a cooling rack, my Coca-Cola bowl is not exactly the right tool, lol

WOO-HOO! Looks great! Congratulations...!

I love making bread. (Was going to today, but DH got violently ill last night & I was up 1/2 the night taking care of him...) I actually have one of the big KitchenAid 6 quart mixers I got with the idea of making large batches at a time.. But I've found I really prefer hand-kneading to machine-kneading. It's very relaxing. But hand-kneading is better for smaller batches.

Hope hubby is feeling better!

I found the whole thing was therapeutic. Despite not dividing the flour, and realizing as I Was kneading the dough, plus the fact that I Wasn't paying attention to how long I was kneading....the end product was pretty forgiving! I must say, I was scared to start....weird! I put the whole thing off for a full day! Lol

Congrats!  My First Yeast Bread Ever 3170584802  I LOVE making homemade bread!  Remember, homemade bread will always be denser than store-bought sandwich bread.  They use all kinds of dough conditioners and preservatives to make it light and keep it that way.  The good stuff is heaver, denser, and MUCH more tasty!

Well done SR. Looks great. Making bread is very rewarding, the aroma is terrific and in our house the bread usually disappears quickly. The last one I made was a cheese bread and Mrs TD keeps reminding me how good it was (her hint for me to make more).

I love the smell of home baked yeast bread.  I'm currently on a mission to find a nice yeasty asiago cheese bread.   Kroger's store bought is very nice so I am expecting to be dazzled by a home baked version.  
If you like English muffins but don't like the hefty store prices,  look up English muffin bread online. It is made as a loaf of bread. I've made it and it is terrific.  There are recipes for individual English muffins like the name brand Thomas's, but it looked like a lot more work than making a loaf.

I bake a lot of no-kneed ("5-minute") breads that are also incredible but are much faster and simpler to make.  Here's a video showing the basic recipe/method:



Here's the list of ingredients, in case you can't see it in the video:

  • 6-1/2 cups unbleached flour
  • 3 cups warm water (100-105 deg. F)
  • 1-1/2 Tbsp active dry yeast - does NOT have to be Red Star  Rolling Eyes
  • 1-1/2 Tbsp kosher salt

Congrats on your first loaf of bread!  Bread is usually pretty forgiving, and even if you mess something up, it still usually tastes good.

I was making a loaf of sourdough bread every week, but unfortunately my starter died Sad  I'll make another one in the spring.  I would mix it in my kitchenaid mixer, because I'm lazy!  Now that I'm making regular bread instead of sourdough (which I would let rise for 6 hours), I'm using my bread machine!  It makes a good loaf and only takes a couple minutes.

Wow, Kate, thanks for the video info! Very different than what I made. I love crusty bread, especially for dipping! EVOO and spices...yummy!

LM, I love the Kroger bakery Asiago artisan loaf! Almost as good as Paneras! Would be awesome to bake some...mmmm

LS, I love love love sourdough, but I know it is more of a challenge! I am going to try to get my chops down on the regular bread! My secretary has a bread machine, but doesn't use it she says. Why not, I say!

The hardest part about sourdough (and it's really not hard, I promise) is keeping the starter alive.  And that's not hard, either.  Mine died on vacation Embarassed  It always surprises me how many bread machines you can find in a thrift shop!  And they're usually $5!  I think people have reached maximum laziness if they can't even throw some flour in a machine lol!

It is a day killer, it was nice to do when the oven helped heat up the house and I was trapped doing LOADS of laundry! Lol

Your loaf looks divine!!!!! I just made yeast rolls last night. My bread pans are still in storage Sad . So I can only make rolls or loaf bread on a cookie sheet. My boys love to help make bread and even the rolls.

Honestly, I am not the person to rely on about bread...I have literally made one loaf ever!  It was fun!  

I am doin some more this weekend!  Hopefully I won't screw up so much.  Bread is forgiving

I'm trying not to eat too much gluten/carbs, but I do make a loaf of bread once every 1-2 weeks for my hubby's sandwiches.

You should check out some stuff on sourdough bread.  If it's traditionally made (with a long souring process), it actually breaks down the gluten.  And if you start with a low gluten flour, like spelt or rye, even some people with celiac can eat it.  The Weston A Price Foundation website has some info on that.  Here's a long article about it, and the recipe that I personally used is closer to the bottom, soaked yeasted bread.  It's certainly different than normal bread, but good!  And better for you than conventional bread.
