Banana peppers - dehydrating?
We thought we were getting sweet potatoes this spring, but ended up w/ banana peppers by accident...
Besides eating on Greek pizza, fresh, pickled, what else can I do with them?
Has anyone tried dehydrating them? How did they turn out?

Banana peppers can be sweet enough to go in a gazpacho, I think. And gazpacho can be frozen ... and so far mine came out just fine after freezing, no "enzyme rot" or anything -- which I did get on asparagus(not in gazpacho), once.
Also, I don't see why they couldn't be turned into a salsa or relish. Or roasted like any other pepper, whether you leave the skin on or not, and then made into a sandwich. I also slice my peppers into scrambled eggs for a breakfast, or sautee them with rounds or cubes of sausages and onions for a hearty lunch or dinner.
