What potatoes for my SFG? Empty What potatoes for my SFG?

Have everything sown/planted in my 4x4 SFG except for potatoes. Going to wait another week or two for the ground to warm up before I put the spuds in. There are SO many different varieties I'm not sure what I want. We like to make homemade french fries so would like a variety that would work well for that. And probably another variety for slicing and pan frying. Any specific varieties I should be considering? I have 2 squares set aside for potatoes and plan to plant 2 plants per square. Thanks!!

There are varieties that are early harvest, late harvest. Waxy, starchy purple, red, gold , determinate, indeterminate.

I have a dedicated potato bed. The foliage will get tall and overshadow other plants. in a 4x6 last year I grew reds, purples, fingerlings and russets.

Thanks for the links. Very informative!! I'm leaning towards russets and Yukon gold right now. I planned my potato squares to be in front of my back two squares which currently has spinach, but will be replaced with tomatoes once the weather warms enough to nullify growing spinach. Tomatoes I'll get as transplants so shading shouldn't be a problem, hopefully.

Any issue with planting two different varieties in the same square?

Picked up some Yukon Gold and Chieftain seed potatoes. Planning 1 square of each with 2 plants per square. Is the 2 plants per square acceptable?
