My wife got this recipe from our local farmers market in Peachtree City, GA.  She immediately took some of my tomatoes and made it.  It is OUTSTANDING!  My wife made three changes: We did not have horseradish, so she did not use any (plus I don't like horseradish), she put a slice of mozzarella cheese on each English muffin (use your favorite), and she added a lot more garlic to the puree.

Recipe of the Week
EGGS POACHED IN FRESH TOMATOES AND HORSERADISH AND BASIL SAUCE
Makes 4 servings
Ingredients
2 T. veg oil
1 medium onion, minced, 1 tsp. minced garlic
5 fresh ripe medium tomatoes
3T grated fresh horseradish or 1 T prepared
2 tsp fresh basil
4 eggs
2 English muffins toasted
 
Directions
Saute onions and garlic in skillet about 5 minutes in oil
Puree tomatoes--add to skillet and cook uncovered until reduced--15 min. Add horseradish and basil.
Make slight indentations in sauce, Gently crack eggs into sauce. Cook covered until set -3-5 min.
Spoon eggs and sauce over toasted muffins.
