I'm especially looking for burpless, thin skinned, low-seed, long thin cucumbers - called "English Cucumbers" around here (maybe also European?). I think these may be some available varieties, though I'm open to suggestions:
Green Finger
Tyria
Picolino
Socrates
Manny

I'd also like to try some specialty cucumbers including:
Suyo Long
Armenian/Serpent Melon

Other wants (prefer Heirloom, non-GMO, Organically grown):
VEGGIES
Uncommon tomatoes
Fingerling potatoes
Peanuts
Fruit trees
Banana melon
Lime Basil
Cinnamon Basil
Strawberries (esp unique varieties)
White cherry tomatoes
Minnesota Midget Melon
Golden Crookneck Squash
Yellow Zucchini
Hungarian Wax Pepper
Rhubarb
HERBS
Cilantro
Chive
Anise
Mints (orange, candy, chocolate...)
Comfrey
FLOWERS
Ice Plant (white centers)
Love in a Mist
Lacy Phacelia
lily of the valley
oriental poppy
succulents
uncommon poppies
lavendar

I don't currently have any seed saved from my garden but have several varieties on order. The disclaimer being that the sellers claim they are heirloom, non-GMO, varieties grown under organic conditions (though not certified organic); I, however, can not confirm the claims or quality of seed as I haven't grown them yet. I should have most of the following on hand by this weekend.  Extras are limited.

Paris Island Romaine
Sugar Baby Watermelon
Cocozelle Summer Squash
Spoon Cherry Tomato
Matt's Wild Cherry Tomato
SanMarzano Paste Tomato
Gilbertie Paste Tomato
Ground Cherry/Cape Gooseberry
Mini Mexican Sour Gherkin (Cucumber)
Black Beauty Zucchini
Orange Bell Pepper
Little Finger Gourmet Carrot
Baby Pam Pumpkin

Sweet Genovese Basil
Bergamot/Lemon Mint
Mixed Calendula

5 Spot Nemophilia
Teddy Bear Sunflower
Red Sun Sunflower
Johnny Jump Up
