Aged compost

How can you tell if a source of compost is aged enough to be ready to use? My local craigslist has various composts for sale/free. The horse manure says it was "aged through fall and winter" and contains wood shaving and the ad for the duck manure says it isn't as hot as chicken but doesn't mention aging or anything. Same for the llama and goat "composts". Are all bagged mass (or not so "mass") marketed "composts" actually the "right" compost. Some was saying the other day that you don't want composts with certain things (that claim to aerate the soil I think) but it is 3am and the only reason I am up is I can't sleep so I can try to track down what I am talking about in the morning if I need to. I am always a bit anxious about putting any of that stuff straight on to my vegetable garden but I am not so particular about my flower beds. I take as much as I can and add it to my compost, especially in fall so it has time to age to MY liking but that is just me. Others do things differently because composting, like parenting, is kind of a personal thing.
