tell me: best purple (green) beans
So, the last couple years I've grown purple (green) beans. they were bush beans, and the purple went away when they were cooked so they came out looking like boring normal green beans. Plus, they didn't taste very good.
Am I just dreaming? I'd love to find
Pole beans that are purple and stay purple when cooked AND taste good.

I don't know of any that stay purple when cooked, but the Blue Coco beans that we've grown the past two years taste wonderful, especially if picked before they're too mature. My husband eats them right off the plant, to the point that I have to harvest when he's not with me if I want to have enough left to do anything with

Cherokee Trail of Tears pole beans turn purple, but only when they've ripened to where the beans inside turn black, and by that point the pods are not fit for eating in my opinion.
