eggplant recipes
I need some good recipes for eggplant. I am growing it for the first time in my
garden and it is going wild. I have only 2 plants but I have at least 8 eggplants.
Give me some new ideas.

Luke, there are a number of Eggplant recipes in the various recipe forums. Use the advanced search feature to search for the word Eggplant and select the Recipe group. Note the arrows on the image below - in the "Search In" drop down, scroll down until you see the various recipe groups, and then select the one with the double-dash line right bove the recipe descriptions. That will bring up all of the Eggplant recipes.

YUM! What kind are you growing, Luke? I love my eggplant, and honestly I didn’t really grow up eating it...I too use the search engine in the upper left hand corner...I will try to cut and past some others into this thread. It is so delish! Most of the time I just stir fry/sautee it with garlic (lots) and EVOO, add in other veggies—-you cannot go wrong.
