Hi, Everyone! So glad to find this forum.
My husband and I moved from NC to Ormond Beach, FL last Spring, and I decided to do a raised bed garden. Success! And then we planted papaya trees and many other fruit trees and have had great success with that. Wow, it appears almost like we cannot kill anything! So different from my experience in NC.
We start all of our veggies from seed. Currently have green peppers, hot peppers, three varieties of tomotoes, spanish pumpkin (doing great this year!), squash, cucumbers, radishes.
Earlier this week I saw an article entitled "Never Buy these 5 Veggies Again", and so I cut the base off of a bunch of celery I had in the fridge, and then off some bok choy, and set them in about 1/4 in of water to sprout. Nothing to lose, right? Well, all have already sprouted and I am waiting another few days before planting them. Any advice on how long to wait would be greatly appreciated.

You seem to have settled in well, good for you.
Your questions about the sprouting celery; in a short while you will see some "nubs" on the bottom and I think you can safely plant hem then.
You will find many more SFGers from Florida on this Forum and they will help you with any more questions you have.

Word of caution, though. Supermarket veggies have a provenance you can't be sure of. They may be resistant to diseases that other plants in your garden are not ... and carry those diseases with them, from all over this country and even other countries. It may be much cheaper and safer in the long run to buy a packet of seeds.
