few problems adapting my plot to sq ft gardening

i have a few problems and questions. any help would certainly be appreciated. the problem is i have a community garden 3ft x 7ft inner perimeter. we are limited to a 40" height of any plant. i am planning to surround the outer perimeter with a trellis 40" high. can i train/prune tomatoes/beans(pole) to grow horizontally along this fence?
would i plant the tomatoes/beans in the center of the square and allow it to run along the ground till it hit the trellis. can i then prune then prune the tips causing them to develop side branches? am not sure how to do this. i also saw a youtube where they were training zucchini to grow vertically along a pole and cutting off the leaves under the fruit as it grew. does anyone know about this method and could i do the same thing on a horizontally trained zucchini?

one last question.. my tomatoes under lights are starting to bloom but it is to soon to plant them(zone6a). should i pinch the flowers off till planting time?

I'm in Zone 8b-9a, so I can't address when to plant. I do, however, successfully grow summer squash in pots with the shorter tomato cages. The leaves stick out beyond the cages but the main stem stays within the cage, sort of curling around. It makes it easier to trim off the spent leaf stems. Always leave the leaf stem just below a fruit to feed it. If you are limited in height to 40 inches, I would plant bush beans and peas, and determinate tomatoes. Bush beans and peas can get a little unruly so a little fence or trellis around their areas can help. Maybe 3 or 4 tomatoes in cages at one end in 6 squares. You can always plant a little leaf lettuce or radishes, etc., among them. Eggplant and peppers can be staked or caged 1 per square and should stay well within the 40" height. Are the trellises in place already, or were you planning to add them? Hope this helps. Others will probably offer their suggestions.

have been re planning my garden squares since your post and think i will go with the bush beans but not the determinate tomatoes as i have 3 indeterminate which i have been babying along under lights and i need to give them a home.
have not built my trellis as of yet but think to go with emt(painted green) and green jute twine.

Here is a thought for your indeterminate tomatoes... why not when they reach the top of your trellis gently bend the stems and send them back down the trellis. Good luck with you community garden we were part of one a couple of years ago. It was a lot of fun
