Seafood Stew with Fennel

Seafood Stew with Fennel
This is the recipe that inspired me to try and grow fennel this year. I had no idea how much I loved fennel before I tried this recipe. It is dead simple and quick to make.
Seafood Stew.
One pound of gulf shrimp
One pound of
Grouper or other mild white fish
Two tomatoes chopped
One red bell pepper chopped
A few cloves of garlic minced
One cup of onion chopped
One large fennel bulb sliced in thin strips
Pinch of salt
Fresh cracked pepper
Chicken broth ( I use the large 32oz boxes of broth in the low sodium variety)
Saute the onion until translucent. Add in the garlic and saute a minute longer.
Add in the bell pepper, tomatoes, fennel, and broth. Bring to a boil.
Add in the fish and shrimp. Boil until shrimp is pink and fish is cooked through.
Season with salt and pepper to taste.

I need to find a free night to post some more. I have a bunch of ideas on stuff to post. I paid my way through school the second time around by working on the floor and in the kitchen of a Private Country Club. I got to work with some really talented chefs and learned a bunch about playing with flavor combination's.
Oh and I wish I could say I put forth a lot of effort for these posts but I had already shared that recipe on a cooking forum so I had the pictures hosted and just had to copy and paste the text.
