I canned my first batch of tomatillo salsa this fall -- from storebought; my crop pretty much failed -- and will be doing batch #2 this weekend, as I've already eaten half of batch #1. I'm not sure how to describe it to you, but it's the primary ingredient in salsa verde.

As far as I know, you don't eat them fresh (I could be wrong? I personally wouldn't want to eat them fresh) But cooked, they are a little tart, a little sweet. This may sound like heresy, but I think I'm beginning to prefer tomatillo salsa to tomato salsa (gasp!)
