I just picked a 7 pound vining zucchini. In case anybody is wondering that is a lot of zucchini. It is enough for 6 overflowing pies. It is also what happens when the "won't eat weird vegetables" neighbor waters my garden when I am on vacation. Don't get me wrong I am not complaining, it is just I kept cooking and the pot was still full. Thanks for the zucchini unlimited recipe!!!

Hi, This recipe is close to zucchini unlimited. It was posted by josh. Enjoy

zucchini pie with ice cream on top

ingredients
1 pastry for a 9 inch double crust pie
2 zucchini
2 tablespoon lemon juice
1 pinch salt
1 1/4 cups packed brown sugar
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons cream of tarter
1 pinch ground nutmeg
3 tablespoons all-purpose flour

directions
peel zucchini. Cut into quarters lengthwise,then remove seeds and cut crosswise (as you would cut apple for apple pie)
toss together 4 cups chopped zucchini,lemon juice and salt. Place mixture into frying pan and cook until tender-crisp
in a separate bowl,mix together the sugar,cinnamon,cream of tartar,nutmeg and flour, add the cooked zucchini to sugar mixture and mix well
place filling into 9 inch pie crust,dot with butter, and place top crust on. bake in oven 400 degrees for 40 minutes or until golden brown.

I'm going to have to try that. The rampicante regularly weigh in at at least 5 pounds. (Plus there is the MONSTER still hanging on the trellis... but that one's destined for ravioli if I have my way!)
