Sadly, the taste wasn't as I expected -- initially a little bland, but a slightly bitter aftertaste. (raw) Google tells me I must have underwatered it, which I find hard to believe. Or I pulled it out a little too early. Will restrain myself with the second one, which is about 3 weeks younger.
Pan-roasted it was lovely and tender, and tasted better. But I'd rather be having these raw through the summer.
Still very exciting to have finally harvested a beetroot!

I have never cared for beets raw, but I love them roasted or boiled. If you are looking for a sweet beet, try a Golden Beet.

Interesting. The ones that grow in the shops here are sweeter than carrots and I've never noticed an earthy taste. Maybe they're a special variety that we humble home growers don't get access to... So, they said in the catalog they were individually sized…true. These guys are small. Not a large seed area at all. I am growing more of them next year!

Harvested some Red Ruby (Rhubarb) Swiss Chard, and a couple Bok Choy today. The Swiss Chard went into the freezer for later use, and the Bok Choy was sauteed for dinner. Some of the red cherry tomatoes photo bombed the picture, too.

I also made frozen hashbrowns. Lemon water, par boil only 3 minutes, ice chill and spread on a cookie sheet to pre-freeze before vacuum sealing.
