I am entering my second "growing" season in New Zealand. I made Mel's mix as best as I could last year with great results. Entering a new season, what should I be doing to my boxes to ensure they are in the best condition for growing?

Add more compost up to the original height and mix in a bit. What did you end up using for your Mel's Mix last "summer"?

For my first season of square foot gardening I used vermiculite, compost, and instead of peat I used bark fines. Peat was not so available (vermiculite here comes from Australia).

Agreed. Add as much quality compost as you can fit in the box and mix it up.
