What does one do with the green beans that were hiding...
This is the first year I have had any luck with pole beans. Two plants and it is going wild. Up the trellis and down and then up. So many leaves that I had to prune some of them out. Still could not see all of them until they were huge. What to do with them. Such a waste. Anyone use these for something that is productive? I dislike pickles. How about I cook them to death and then grind them up and feed them to my dog - in small amounts. I know this is probably crazy but I come from a family that always cleaned their plate.

If they are over large and still green you can harvest them as shellies. Remove the green seeds from inside the pod and just cook the seeds. When I cook my Rattlesnake Beans, I love them when I cook the tender snap beans along with the shellies.

greatgranny, save some for next year's seed and if you ahve too many give some of them away.

I seem to have hidden dried beans when I pull the vines out. I just save the dried beans for planting the following year. (Except this year - bean failure)

None of the beans are turning brown at this point.

Me too! When I pull the plants, if there is something remotely greenish, I will cook it with the next batch. If totally dried, save and plant/trade next year! Yum!

I was in a hurry yesterday to get supper ready and tried to take out the beans like yolos said. After about the 4th one I gave up. So, from now on - I'm going to allow the beans to stay on the plant until they are dry and use them for baked beans or in a bean soup. The ones I have in the frig will get cooked until totally done and I will give them to my dog.

Well maybe it depends on the beans. The variety I get the shellies from are Rattlesnake Beans. Harvest them while they are big and have filled out with the beans inside but have not started to turn brown.
Also, I spend a lot of time shelling English Peas and all kinds of cowpeas. So shelling some over ripe green beans is easy for me.
Here is a picture of a few beans. The beans on the left are perfect for cooking as green snap beans. The bean on the right is past prime for green snap beans. The shelled beans in the middle are what I call shellies. These are the beans that I like to cook along with the regular green beans. The bean on the right was easy to split open and get the shellies out but yes, it does take a little time to get the shellies out. So I guess different strokes for different folks.

I let them dry on the vine and then use them the next year for seed.
