canning

As I said in an earlier post today I brought out the water bath canner to start my season. I always start with something I don't think anybody would want so I don't have to give some away like I did last year. As a result I ran out of pickles and beets.  Today I canned tart cherries with rhubarb, ginger, onion and garlic chutney. As usual the first time is always a learning experience for me ( I'm the guy who forgets how to ride a bike). I was really organized today and everything was just great until my first batch went into the water and I noticed little bubbles coming out of the jars. After processing all sealed but one but a lot of liquid came out of the jars so the jars are not full like they should be. The second batch I got the lids on correctly and they are fine. Now I can progress with my new pressure canner with pickles, beets, peaches and apples. Can't wait.

a few air bubbles coming out is perfect. You do not want to tighten the lids too much.
