How to plant melons?
I have one plant that is to be planted 1 per 2 sq ft. Everything else uses one square. Where on the gird do I put the one plant and give the others the space they need? Do I simply skip one square and continue planting or will I need to skip a square in all directions?

Grow it on a trellis. On a four foot long trellis (4 squares) I am growing one Isaeli melon positioned in the square to the far left, then one blank square for the melon to spread into, and then two squares of cukes, planted two to a square.
If you are not growing on a trellis, then I would plant it on the side of the garden bed with a blank square on either side (using 3 squares total) and allow it to grow out of the SFG. But be warned, depending on the kind of melon, it could take up 8-12' of the surrounding area.
