Did my first canning of the season this morning; Gingered Watermelon Rind Relish. The recipe is from a book called "The Locavore's Kitchen" by Marilou Suszko. I heard her speak at a gardening event in March and bought the book. I would highly recommend it; lots of good info on picking, preparing and preserving fruits/veggies as well as info on meat/dairy/grains grown in a sustainable way.

that sounds really delicious! i've been saving my watermelon rinds in the freezer to make candy for christmas but i might have to divert some for relish.

i make it by boiling the whites twice--first in a clear water, then in a brine for about 10 minutes. then i put them in a heavy syrup with some mint or basil, and boil them until they are soft. i use a slotted spoon to put them on a piece of parchment paper and sprinkle them with sugar, and dry them in the dehydrator until they are stiff enough to hold their shape. you can make them in the oven if you prefer.

Watermelon rind makes a nice marmlade as well. Can't tell you exactly how I made them, about 30 years ago, but I know I had to use an lemon marmalade receipe. Mixed shredded watermelon rind and lemons.
