Gluten-free onion rings that are actually crispy
My hubby has celiac disease & finding edible gluten-free recipes is a real challenge for us. I found this one on vegetarian.about.com They were the crispiest ones I have ever made. I usually won't even taste his gluten-free food, but these were delicious.
Gluten-free onion rings
Sliced onion rings, 1/8 to 1/4 inch thick. I used Vidalia.
1 cup rice flour (I used 1/2 brown rice flour, 1/2 white rice flour)
1 teaspoon baking powder
1 teaspoon garlic powder
salt to taste. I used 1/2 tsp and it was just right for us.
1 egg, slightly beaten
3/4 cup water
Peel onions and cut into 1/8-1/4 inch thick rings. Separate rings. Sift rice flour, baking powder and garlic together in bowl. Mix in egg and water until smooth.
Gently dip onion rings into batter and shake off excess batter. Place in hot oil and cook until brown. Serve warm.
The rice flour didn't have an odd taste like so many of the pre-mixed gluten-free flour blends and they were YUMMY!

I'm going to try these too! BTW... baking powder is what makes them nice & crispy. You can add it to all kinds of fry batters and doughs
