Over in the “sweet potato question” thread I posted some comments on my experience with raising sweet potatoes in a SFG. Below is how I cooked my first harvest of those potatoes.

WARNING: For the really health conscious members on this website, this method can send your blood sugar levels up just reading about it, and, possibly add a pound or two as well. affraid

To cook them Mom’s way, first I scrubbed them and cut into slices about 1/4” thick. (No, I didn't peel them.) Then, in my small cast iron skillet over medium heat I melted about 2 Tbsp of butter. (Yes, the real stuff.) I added the potatoes and cooked them for a while, letting them brown lightly and stirring occasionally until they started getting tender enough to cut with the spoon. Next, I added 1/4 c sugar and stirred to coat all of them well. Finally, I covered the skillet with a lid, cut off the heat and left it on the stove eye. They continued to cook very gently while I finished preparing the rest of our meal. When I was ready to serve them, they were sooo tender and had a really yummy glaze. These three potatoes were enough for each of us (DH and me) to have a serving with the main part of the meal, plus, I ate the last serving as my dessert.

This was enough to make the whole effort worthwhile and I most definitely will be raising sweet potatoes again next year.

Would love to have some suggestions on different ways to cook SPs. Does anyone else have sweet potato recipes to share?

Sweet Potato Pie!! I use Paula Deen's recipe but I don't even bother to make the meringue for the top. It's awesome with just the pie layer...eat it like pumpkin pie!

Potatoes - How my Mom Cooked Sweet Potatoes 61949 Thanks for the reminder. Had sweet potato pie many times during the holidays when I was was growing up. They never had any meringue either and were totally scrumtious.
